Date Quinoa Porridge
INGREDIENTS
- 1/3 cup quinoa, rinsed
- 1 tablespoon pitted dates, diced
- 1/3 teaspoon cinnamon
- A pinch of nutmeg
- 1/2 cup water
- 1 cup skim milk, plus more for serving (sub with almond, or coconut milk)
- salt
- 6 chopped walnuts
- 1 teaspoon honey (optional)
DIRECTIONS
- In a medium saucepan, combine the quinoa with the dates, cinnamon, and nutmeg. Add the water, milk and a pinch of salt and bring to a boil.
- Cover and cook over low heat until the liquid has been absorbed and the quinoa is tender about 15 minutes
- Serve in a bowl and sprinkle with chopped walnuts and honey if you use.
