Date Quinoa Porridge

Date Quinoa Porridge

 

INGREDIENTS 

  • 1/3 cup quinoa, rinsed
  • 1 tablespoon pitted dates, diced
  • 1/3 teaspoon cinnamon
  • A pinch of nutmeg
  • 1/2 cup water
  • 1 cup skim milk, plus more for serving (sub with almond, or coconut milk)​
  • salt
  • 6 chopped walnuts
  • 1 teaspoon honey (optional)

 

DIRECTIONS

  1. In a medium saucepan, combine the quinoa with the dates, cinnamon, and nutmeg. Add the water, milk and a pinch of salt and bring to a boil.
  2. Cover and cook over low heat until the liquid has been absorbed and the quinoa is tender about 15 minutes
  3. Serve in a bowl and sprinkle with chopped walnuts and honey if you use.
