Maroccan chicken kofta
INGREDIENTS
- 450gr lean ground chicken
- 1/3 teaspoon salt
- 1/4 freshly ground black pepper
- 3 clove garlic, minced
- 1/4 cup minced onion
- 1/4 cup minced fresh flat leaf parsley
- 1 tbsp ground coriander
- 1 tsp ground cumin
- 1 1/2 tsp cinnamon
- 1/2 tsp ground allspice
- 1/4 tsp cayenne powder
- 8 wooden skewers, soaked in water for 20 minutes or 8 metal skewers
DIRECTIONS

Combine all ingredients and mix well. Take 1/5 of the ground chicken mixture and shape it around a skewer to form a log about 6 -7 inches long and 1 – 1 1/2 inches thick. Repeat with remaining skewers and mixture.

Preheat grill to medium hot. Grill skewers un (about 12 minutes).

Remove from grill and serve with diced tomato, diced cucumber diced onion, and corn and rice pilaf!
