Cocoa Banana Oat Cake

Cocoa Banana Oat Cake

 

INGREDIENTS 

  • 1 cup oats 
  • 2 large bananas, very ripe
  • 1 tablespoon chia seeds 
  • 2 eggs 
  • 1/3 cup honey
  • 3/4 cup milk
  • 2 teaspoon vanilla extract 
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 teaspoon salt
  • 3 -4 Tablespoons cocoa powder
     

 

TOPPINGS (optional)

  • Banana
  • Strawberries
  • Raspberries 
  • Dates
  • Chia seeds
  • Walnuts
  • Almonds 
  • Honey 

 

DIRECTIONS

  1. Preheat oven to 165 C degrees.
  2. Place oats in a food processor and blend/pulse until they reach a rough, flour-like consistency.
  3. In a food processor add bananas, eggs, honey, milk and vanilla. Mix to combine. The mix should have no lumps.   
  4. Add dry ingredients to wet ingredients and mix until just incorporated. Allow these to sit for 10 minutes to soak the oats.
  5. Pour batter into a greased baking dish and bake at 165 C for about 20 -23 minutes, a toothpick inserted in the center of a cake should come out clean.
  6. Allow to cold and serve with the topping of your choice
