Cocoa Banana Oat Cake
INGREDIENTS
- 1 cup oats
- 2 large bananas, very ripe
- 1 tablespoon chia seeds
- 2 eggs
- 1/3 cup honey
- 3/4 cup milk
- 2 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/3 teaspoon salt
- 3 -4 Tablespoons cocoa powder
TOPPINGS (optional)
- Banana
- Strawberries
- Raspberries
- Dates
- Chia seeds
- Walnuts
- Almonds
- Honey
DIRECTIONS
- Preheat oven to 165 C degrees.
- Place oats in a food processor and blend/pulse until they reach a rough, flour-like consistency.
- In a food processor add bananas, eggs, honey, milk and vanilla. Mix to combine. The mix should have no lumps.
- Add dry ingredients to wet ingredients and mix until just incorporated. Allow these to sit for 10 minutes to soak the oats.
- Pour batter into a greased baking dish and bake at 165 C for about 20 -23 minutes, a toothpick inserted in the center of a cake should come out clean.
- Allow to cold and serve with the topping of your choice
