Chickpea Quinoa Salad
INGREDIENTS
FOR THE SALAD:
- 1/2 cup quinoa, cooked according to package
- 1 can of chickpeas (240grs), drained and rinsed
- 1 medium zucchini, chopped into small chunks
- 1 small onion, chopped
- 1/4 cup fresh cilantro, chopped
FOR THE DRESSING:
- 3 Tablespoons olive oil
- 1 Tablespoon lemon juice
- 1 teaspoon turmeric
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 Freshly ground black pepper
* Add Optionally
Cherry tomatoes, cucumber, tuna
DIRECTIONS
- Cook quinoa according to package and set aside to cool.
- In a large mixing bowl mix chickpeas, zucchini, onions and cilantro together.
- In a small mixing bowl whisk together the olive oil, tumeric, cumin, paprika, salt and pepper for the dressing. Taste and adjust the seasoning.
- Add the quinoa to the zucchini and chickpea mixture and combine.
- Mix in dressing and stir to combine. Cover and refrigerate until ready to serve.
- Garnish with fresh cilantro.
