Easy Onion and Potato Soup

 

Easy Onion and Potato Soup


Course       :  Lunch / Dinner

Prep Time  :  10 minutes 

Cook Time :  20-35 minutes

Total Time  :  45 minutes

Servings    :     2   people

INGREDIENTS 

  • 250 grams potatoes, cut into cubes
  • 500 grams yellow onions, chopped
  • 3 cloves garlic, peeled and chopped
  • 900 ml bio vegetable broth or 1 bio vegetable tube and 900 ml water (optional 900 ml light low fat milk)
  • 1 tablespoon Extra virgin olive oil 
  • 1/2 teaspoon salt
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon black pepper powder
  • Fresh thyme or any other fresh herb you like ( oregano, rosemary, etc )   

 

 

 

DIRECTIONS

1. Heat the oil in a large pan and add the onions, garlic and potatoes.  Cook for 3-4 minutes until starting to soften.

2. Add the vegetable stock and bring to the boil. Simmer until the vegetables are tender.

3. With a hand mixer or in a blender, puree the mixture until smooth. Return to the saucepan, and reheat. Season with salt, and pepper, celery salt and thyme.

4. Serve in a soup bowl and topped with oven baked crispy onions.
