Quinoa Avocado Power Salad

Quinoa Avocado Power Salad

 

INGREDIENTS 

For salad

  • 1 cup arugula 
  • 100 grams quinoa
  • 1 ripe avocado, pit removed and diced
  • 1 large cucumber, diced
  • 1  tomato, diced
  • 1/4 cup of Fresh Mint, chopped​
  • 2 tablespoons walnuts, chopped 

 

For dressing 

  • 2 teaspoons fresh lemon juice
  • 1 tablespoons extra virgin olive oil
  • salt and pepper, to taste

 

DIRECTIONS​​

  1. In a small saucepan, bring the water and a pinch of salt to a boil. Add the quinoa, cover, and simmer for 15 minutes, or until the water is absorbed. Transfer to a medium bowl to cool to room temperature, then fluff the quinoa.
  2. Refrigerate the quinoa for 20 minutes.
  3. Add the baby arugula, cucumber, tomatoes, mint, walnuts, and avocado to the bowl of quinoa and mix to combine.
  4. Prepare the dressing by whisking together the ingredients.
  5. Drizzle the salad with the dressing, as desired. Season with salt and pepper, to taste. Mix until fully coated and​ leave to stand for 1-2 minutes, then serve.
