Quinoa Avocado Power Salad
INGREDIENTS
For salad
- 1 cup arugula
- 100 grams quinoa
- 1 ripe avocado, pit removed and diced
- 1 large cucumber, diced
- 1 tomato, diced
- 1/4 cup of Fresh Mint, chopped
- 2 tablespoons walnuts, chopped
For dressing
- 2 teaspoons fresh lemon juice
- 1 tablespoons extra virgin olive oil
- salt and pepper, to taste
DIRECTIONS
- In a small saucepan, bring the water and a pinch of salt to a boil. Add the quinoa, cover, and simmer for 15 minutes, or until the water is absorbed. Transfer to a medium bowl to cool to room temperature, then fluff the quinoa.
- Refrigerate the quinoa for 20 minutes.
- Add the baby arugula, cucumber, tomatoes, mint, walnuts, and avocado to the bowl of quinoa and mix to combine.
- Prepare the dressing by whisking together the ingredients.
- Drizzle the salad with the dressing, as desired. Season with salt and pepper, to taste. Mix until fully coated and leave to stand for 1-2 minutes, then serve.
