Steak Salad With Caramelised Onions
INGREDIENTS
- 200 gr top sirloin steak
- A handful baby arugula
- 5 button mushroom
- 8 cherry tomatoes
- 1 large yellow onion
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 teaspoon balsamic vinegar
DIRECTIONS
- For the caramelized onions: cut onions in half and thinly slice short end. Add 1 tbsp olive oil to a nonstick pan and add the onions. Add salt and pepper and cook on medium-low to low heat until onions are tender, transparent, and slightly brown, about 30 to 35 minutes, stirring occasionally.
- Season steak with salt pepper. Cook the steak about 3 to 4 minutes on each side for medium rare, or longer to your desired likeness (until a thermometer inserted in the center registers 65°C for medium rare, 70°C for medium, or 75°C for well done.) Let stand for 8 minutes, then slice into thin strips.
- While steak is cooking add the mushrooms into the grill and cook for 5 minutes.
- In a big bowl mix the arugula, 1 teaspoon olive oil, 1 teaspoon balsamic vinegar, salt, and pepper to taste.
- Serve into a big open plate. Add arugula, topped with cherry tomatoes, mushrooms, caramelized onions, and the sliced steak.
- Drizzle with olive oil and balsamic vinegar and serve.
