Healthy Chicken Doner Kebab
INGREDIENTS
For Doner
- 800 grams Chicken thighs
- 200 grams plain zero fat Greek yogurt
- 2 tbsps smoked paprika
- 2 tbsps onion powder
- 1 tsp black pepper
- 1 tsp salt
- 1 tbsp tomato paste
- 2 tbsps fresh lemon juice
- 1 tsp minced garlic
- 1 large potato
- 1/2 red onion
- 1 cherry tomato
For the wrap
- 1 wholegrain Tortilla
- 120 grams doner kebab
- 1 tbsp Tzatziki
- Lettuce
- 1/2 tomato diced
- 1/2 cucumber diced
- 1/3 Red onion sliced
DIRECTIONS
For the Doner
- Trim excess fat from chicken
- In a large mixing bowl add all the marinade ingredients and whisk to combine
- Add the chicken and mix well, ensuring it all coated well
- Cover with cling film and refrigerate for a couple of hours
- Cut the end off a potato and insert a metal skewer or 2 wooden skewers
- Thread each marinaded chicken thigh on to the skewer, pressing each one down firmly
- Add the half red onion and cherry tomato and cook in a preheated oven for one hour at 190 degrees Celsius
- Allow to rest for a few minutes and then slice
For the Wrap
- Spread Tzatziki down the middle of the tortilla and add the lettuce, tomato, cucumber, red onion, and doner.
- Fold the tortilla over the mixture and then push gently but firmly with your hand to form a roll.
- Tuck the ends in and then finish rolling the tortilla into a wrap.
