Spanakorizo - Vegan Rice With Spinach

INGREDIENTS
- 500 grams fresh spinach washed and dry
- 1 Cup Basmati rice
- 1 Large onion, chopped
- 2 Cloves garlic, chopped
- 1 Small bunch fresh dill
- 1 Tablespoon fresh lemon juice
- 1 Teaspoon fresh lemon zest
- 1 1/2 tablespoons extra virgin olive oil
- 2 1/2 bio vegetable stock
- 1 Teaspoon salt
- 1/2 Teaspoon black ground pepper or more to taste
DIRECTIONS
- Preheat a large non-stick pan in a medium heat.
- Add the olive oil and onion and let it cook in a low heat until caramelized, then add the garlic and cook for 2 more minutes.
- Add the fresh dill, salt, pepper, and stir add in the pan the fresh spinach and let it cook for 5 more minutes stirring occasionally.
- When spinach is cook add rice and vegetable stock, close the lid and let in simmer for 15 minutes or until the rice is cooked.
- Add the lemon zest and juice and stir, serve hot or cold.
