Beef mince and Eggs Breakfast

Beef mince and Eggs Breakfast

 

INGREDIENTS 

  • 1/2 tablespoon olive oil
  • 400g Lean Beef Mince
  • 3 garlic cloves, crushed
  • 1 tablespoon ground coriander
  • 1 teaspoon dried chilli flakes
  • 400g can sugar-free tomato puree
  • 250g green peas
  • 3 Free Range Eggs

 

DIRECTIONS

  1. Heat the oil in a large nonstick pan over medium-high heat. Add mince and cook, stirring with a wooden spoon to break up any lumps, for 5 mins or until browned.
  2. Add the garlic, coriander and chilli flakes. Cook for 30 secs or until fragrant. Add the tomato puree and ½ cup (125ml) water. Bring to a simmer. Reduce heat to low. Simmer for 5 mins or until mixture thickens.
  3. Add green peas. Cook, stirring, for 2 mins. Make 3 indents in beef mixture. Crack 1 egg into each indent. Cover. Cook for 3 mins or until egg whites are just set.
