Healthy Chicken Doner Kebab

Healthy Chicken Doner Kebab

 

 

INGREDIENTS 

For Doner

  • 800 grams Chicken thighs  
  • 200 grams plain zero fat Greek yogurt
  • 2 tbsps smoked paprika
  • 2 tbsps onion powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp tomato paste  
  • 2 tbsps fresh lemon juice
  • 1 tsp minced garlic
  • 1 large potato
  • 1/2 red onion
  • 1 cherry tomato

 

For the wrap

  • 1 wholegrain Tortilla 
  • 120 grams doner kebab
  • 1 tbsp Tzatziki
  • Lettuce
  • 1/2 tomato diced
  • 1/2 cucumber diced
  • 1/3 Red onion sliced 

 

DIRECTIONS

For the Doner 

  1. Trim excess fat from chicken
  2. In a large mixing bowl add all the marinade ingredients and whisk to combine 
  3. Add the chicken and mix well, ensuring it all coated well
  4. Cover with cling film and refrigerate for a couple of hours
  5. Cut the end off a potato and insert a metal skewer or 2 wooden skewers
  6. Thread each marinaded chicken thigh on to the skewer, pressing each one down firmly
  7. Add the half red onion and cherry tomato and cook in a preheated oven for one hour at 190 degrees Celsius 
  8. Allow to rest for a few minutes and then slice 

 

For the Wrap 

  1. Spread Tzatziki down the middle of the tortilla and add the lettuce, tomato, cucumber, red onion, and doner.
  2. Fold the tortilla over the mixture and then push gently but firmly with your hand to form a roll.
  3. Tuck the ends in and then finish rolling the tortilla into a wrap.
