One Pan Lemon Chicken

INGREDIENTS
- 2 Boneless skinless chicken breasts ( 450 gr)
- Juice of one lemon
- 1 teaspoon lemon zest
- 1 Lemon cut in 8 slices
- 1 Teaspoon dry thyme
- 2 tablespoons extra virgin olive oil
- 100 ml water
- 1 teaspoon cornstarch
- 1 Teaspoon salt
- 1 Teaspoon black ground pepper or more to taste
DIRECTIONS
- Cut the chicken breast in half lengthwise, brush them with olive oil and season with salt and freshly ground black pepper.
- Head a large nonstick pan in a medium-high heat and add the chicken breast, let them cook for 4 minutes, and turn and cook for another 4 minutes.
- Add the lemon juice, water, and lemon zest. Place on top of each chicken breast two slices of lemon cover with a lid and simmer for 6 more minutes.
- Remove the chicken from the pan. Mix with 3 tablespoons cold water with the cornstarch and to the pan and stir to combine into a thick sauce.
- Serve chicken and into a serving plate and drizzle with the sauce on top. Garnish with fresh or dry thyme and serve hot.
