One Pan Lemon Chicken

INGREDIENTS 

  • 2 Boneless skinless chicken breasts ( 450 gr)
  • Juice of one lemon
  • 1 teaspoon lemon zest 
  • 1 Lemon cut in 8 slices
  • 1 Teaspoon  dry thyme 
  • 2 tablespoons extra virgin olive oil
  • 100 ml water
  • 1 teaspoon cornstarch
  • 1 Teaspoon salt
  • 1 Teaspoon black ground pepper or more to taste

 

DIRECTIONS

  1. Cut the chicken breast in half lengthwise, brush them with olive oil and season with salt and freshly ground black pepper.  
  2. Head a large nonstick pan in a medium-high heat and add the chicken breast, let them cook for 4 minutes, and turn and cook for another 4 minutes. 
  3. Add the lemon juice, water, and lemon zest. Place on top of each chicken breast two slices of lemon cover with a lid and simmer for 6 more minutes.
  4. Remove the chicken from the pan. Mix with 3 tablespoons cold water with the cornstarch and to the pan and stir to combine into a thick sauce.  
  5. Serve chicken and into a serving plate and drizzle with the sauce on top. Garnish with fresh or dry thyme and serve hot.
