Mediterranean Pork Chops


Course       :  Lunch / Dinner

Prep Time  :  10 minutes 

Marinade Time :  30 minutes to 8 houres 

Cook Time :  25 minutes

Total Time  :  75 minutes

Servings    :     2   people

INGREDIENTS 

  • 400 gr Chicken Breast  cut into cubes
  • 250 gr of low fat yugurt
  • 80 gr Pesto genovese
  • 2 table spoons mince garlic
  • 2 table spoons fresh lemon juice
  • 1 tea spoon lemon zest
  • 1 1/2 teaspoon salt
  • 1 tea spoon black pepper
  • Cherry tomatoes 

 

 

 

DIRECTIONS

1. Add all the ingredients except chicken in a large bawl and whisk together.

2. Add chicken in to the bawl and mix well until is evenly coated.

3. Refrigerate for at east 30 minutes and up to 8 hours.

4. After marinating the chicken arrange them on a skewer,  alternately place the cherry tomatoes.

6. Cook in a preheated oven for 20 minutes in 200 decree Celsius, then continue cooking for 5 more minutes in a grill mode.     

7. Remove from the oven and let them rest for 3 to 5 minute covered 

8. Serve with rice or jacket potato and fresh salad
