Pangasius fillet Roulade with Spinach

Pangasius fillet Roulade with Spinach

DIRECTIONS

  1. Preheat oven to 220 degrees Celsius. Put a rack in the middle. Coat baking pan with olive oil. 
  2. For the filling sauté the onion and garlic with the oil in a large skillet. Add spinach as onion begins to wilt. Do not brown the garlic. Cook the spinach until it wilts.
  3. For the sauce heat oil in a saute pan over medium heat and onion and cook for 1 minute; add garlic and cook for one more minute and then add paprika, lemon zest, and tomatoes and cook for more 7 minutes. 
  4. Face the fish dark side up. Salt and pepper each fillet. Divide stuffing among fillets, mounding on thicker half of each. Fold thinner half of fillet over stuffing, tucking end under to form a packet.
  5. Place roulade in the baking dish cover the sauce and then cover the dish with aluminum foil. Bake for about 20 minutes or until fish is cooked.
