INGREDIENTS
- 400 gr Salmon fillet
- 1 red onion, chopped
- 1 red bell pepper, julienne
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin powder
- 1 1/2 tsp red chili powder (optional)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tbs vegetable oil
- 1 fresh lemon or lime wedges for garnish
- Fresh cilantro for garnish
- Wholegrain tortillas for serving
DIRECTIONS
1. In a large bowl, add the salmon and seasonings (keep some aside for peppers ). Mix well to coat.
2. In a large skillet add oil, saute peppers and onions until crisp-tender and spinkle with the remaining seasoning. Remove and keep warm.
3. In the same skillet, cook salmon over medium-high heat for 5-6 minutes or until cook.
4. Spoon filling down the canter of tortillas, garnish with lemon or lime wedges and fresh cilantro.
* Optional toppings (Guacamole, salsa , avocado slices, light sour cream, light yoghurt, hot sauce )
