Asian Vegan Salad with seaweed
INGREDIENTS
For salad
- 2 cups mixed greens
- 80 grams seaweed
- 1 carrot, cut into matchsticks
- 1 cucumber, cut into matchsticks
- 1 spring onion, chopped
- 1 teaspoon sesame seeds
For dressing
- 1/2 teaspoon sesame oil
- 1/2 teaspoon honey
- 1 teaspoon light soy sauce
- 1 teaspoon rice vinegar
- 1 teaspoon fresh lemon juice
DIRECTIONS
- In a large salad plate add all salad ingredients in layers starting with mixed greens on the bottom.
- Meanwhile, whisk together all dressing ingredients in a medium bowl
- Drizzle salad with dressing and sprinkle sesame seed on top and serve.
