Black Eyed Peas Salad

Black Eyed Peas Salad

 

 

 

INGREDIENTS 

  • 100 grams black-eyed peas 
  • 1/2 cup cucumber chopped
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped yellow bell pepper
  • 1/2 cup chopped orange bell pepper
  • 1/2 cup chopped celery 
  • 1/3 cup chopped green onions
  • 1 tablespoon capers, rinsed and drained  
  • 1/3 cup fresh dill finely chopped 
  • 1 tablespoon fresh lemon juice 
  • 1tablespoons olive oil
  • Fresh lemon juice
  • Salt to taste
  • Freshly ground black pepper

 

 

DIRECTIONS

  1. Add black-eyed peas in a pot with cold water and a little salt for at least 5hrs then drain and wash. 
  2. Put blackeyed beans in a pot with water and boil for 15 minutes and drain. Wash thoroughly and return to the stove for another 15 minute in a low fire till the beans are soft. 
  3. Allow to cold and then refrigerate.
  4. In a large bowl combine black-eyed peas and the rest of the ingredients except olive oil and lemon.
  5. Combine lemon juice and olive oil in a small bowl; stir well with a whisk and add black pepper and salt to taste. Pour dressing over vegetables; toss gently to coat and serve.
