Youvarlakia Avgolemono

Youvarlakia Avgolemono

INGREDIENTS 

  • 1 kg lean beef minced meat
  • 150 gr Arborio rice, not cooked 
  • A bunch of parsley, finely chopped  
  • 1 tablespoon chopped fresh mint
  •  2 medium-sized onion, finely chopped
  • 1 tablespoon olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 L water or more/ OR chicken stock

 

Egg-lemon ingredients 

  • 4 eggs
  • Juice from 2 fresh lemons

 

 

DIRECTIONS

  1.  Combine all of the meatball ingredients in a large bowl and mix well. Cover with plastic wrap and refrigerate for about 15 minutes.
  2.  Roll the meatballs out into golf ball sized balls and place in a large pot. Add the water into the pot 
  3.  Cover the pot and let them simmer for 30 minutes.
  4.  Whisk the egg yolks, lemon juice, until combined and frothy.
  5.  Add one cup of the hot stock into the egg-lemon mixture and whisk. Add another cup of hot liquid and whisk well. This will prevent the egg from scrambling 
  6. •Add egg-lemon mixture back to the soup and allow to simmer a few minutes. The soup will thicken.
