Youvarlakia Avgolemono
INGREDIENTS
- 1 kg lean beef minced meat
- 150 gr Arborio rice, not cooked
- A bunch of parsley, finely chopped
- 1 tablespoon chopped fresh mint
- 2 medium-sized onion, finely chopped
- 1 tablespoon olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 L water or more/ OR chicken stock
Egg-lemon ingredients
- 4 eggs
- Juice from 2 fresh lemons
DIRECTIONS
- Combine all of the meatball ingredients in a large bowl and mix well. Cover with plastic wrap and refrigerate for about 15 minutes.
- Roll the meatballs out into golf ball sized balls and place in a large pot. Add the water into the pot
- Cover the pot and let them simmer for 30 minutes.
- Whisk the egg yolks, lemon juice, until combined and frothy.
- Add one cup of the hot stock into the egg-lemon mixture and whisk. Add another cup of hot liquid and whisk well. This will prevent the egg from scrambling
- •Add egg-lemon mixture back to the soup and allow to simmer a few minutes. The soup will thicken.
