Easy Onion and Potato Soup

INGREDIENTS
- 250 grams potatoes, cut into cubes
- 500 grams yellow onions, chopped
- 3 cloves garlic, peeled and chopped
- 900 ml bio vegetable broth or 1 bio vegetable tube and 900 ml water (optional 900 ml light low fat milk)
- 1 tablespoon Extra virgin olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon celery salt
- 1/2 teaspoon black pepper powder
- Fresh thyme or any other fresh herb you like ( oregano, rosemary, etc )
DIRECTIONS
1. Heat the oil in a large pan and add the onions, garlic and potatoes. Cook for 3-4 minutes until starting to soften.
2. Add the vegetable stock and bring to the boil. Simmer until the vegetables are tender.
3. With a hand mixer or in a blender, puree the mixture until smooth. Return to the saucepan, and reheat. Season with salt, and pepper, celery salt and thyme.
4. Serve in a soup bowl and topped with oven baked crispy onions.
