Louvi- Black Eyed Peas with Chard
INGREDIENTS
- 250 grams black-eyed beans
- 1 bunch of silverbeet or chard
- 3 tablespoons olive oil
- Fresh lemon juice
- Salt to taste
- Freshly ground black pepper
DIRECTIONS
- Add blackeye beans in a pot with cold water and a little salt for at least 5hrs then drain and wash.
- Put blackeyed beans in a pot with water and boil for 15 minutes and drain. Wash thoroughly and return to the stove for another 15 minute in a low fire till the beans are soft.
- Meantime, wash thoroughly and cut silverbeet or chard in smaller pieces.
- Use a large pot with lots of water and bring to a rapid boil. Add chard to the boiling water. If stems are more than 1-inch wide, cook them for 2 minutes before adding the leaves. Do not cover the pot when cooking chard. Leaving the pot uncovered helps to release more of the acids with the rising steam.
- Serve blackeye beans in a plate with the chard. Season with salt and ground black pepper, a drizzle of olive oil and lemon juice.
