Healthy Spinach With Scrambled Eggs

 

 

 

 

INGREDIENTS 

  • 400 grams fresh spinach
  • 3 free range eggs
  • 1 tbsp olive oil
  • 1 tsp black pepper
  • 1 tsp salt

 

 

DIRECTIONS

  1. Wash and drain spinach and then slice.
  2. Crack the eggs one by one in a separate bowl and then add all together and add a pinch of salt and a freshly ground back pepper. Whisk to compine
  3. Heat a non-stick pan on medium- high temperature and add the olive oil, add spinach and let it steam by stir it occasionally.
  4. When the spinach cook, around 7 minutes you add the egg mixture, add a pinch of salt and black ground pepper to taste.
  5.  Stir to coat and combine the eggs with the spinach. Cook for 2 minutes and serve.
