Fava Beans With Marrows

INGREDIENTS 

  • 250 grams dry Fava beans
  • 3 medium size marrows
  • 11/2 tsp olive oil
  • 1 tsp red wine vinegar
  • Ground black pepper to taste
  • 3 tsp salt
  • 1 tsp dry mint

 

DIRECTIONS

  1. Wash the fava beans and add them in a big bowl, add 1 liter of water and 1 tsp salt, let them soak overnight.  
  2. Drain and wash the beans under cold water
  3. In a large saucepan, add washed beans, 1 liter of water and bring to simmer, make sure that the water maintains a medium temperature and never get to boiling point.  
  4. Scoop away scum that rises to the surface 
  5. Cut the marrows into big chunks
  6. When beans are nearly ready, approximately in 20 minutes, add the marrows and 1 teaspoon salt and let them cook for 15 more minutes or until the beans and marrows are soft.
  7. Serve them in a soup plate, season with salt and pepper and drizzle with olive oil and red wine vinegar
