Baked Oatmeal Crispy Chicken Breast

INGREDIENTS
- 3 large Chicken breast, cut in half
- 150 grams of oatmeal
- 70 grams grated parmesan cheese
- 4 tablespoons English mustard
- 2 teaspoon garlic powder
- 2 teaspoons smoked paprika
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- Light sour cream to serve
DIRECTIONS
- Cut the chicken breast in half, using a basting brush coat each fillet evenly with the mustard on both sides.
- Place oats, parmesan cheese, garlic powder, paprika, salt and pepper in a food processor. Pulse to combine.
- Add the oat mixture into a zip back and then add the chicken fillet, zip the bag shut firmly, then shake the bag to coat the chicken.
- Arrange the chicken pieces in a large baking dish that's been sprayed with cooking spray!
- Bake uncovered for approx. 20-25 minutes in a preheated oven at 200 degrees Celsius.
- Remove from oven, and let chicken rest for 5-10 minutes to allow juices to settle
- Serve with light sour cream or honey mustard.
** Optional Ingredients ( hot chili pepper, fresh parsley, dry mint )
