Black Eyed Peas Salad
INGREDIENTS
- 100 grams black-eyed peas
- 1/2 cup cucumber chopped
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped yellow bell pepper
- 1/2 cup chopped orange bell pepper
- 1/2 cup chopped celery
- 1/3 cup chopped green onions
- 1 tablespoon capers, rinsed and drained
- 1/3 cup fresh dill finely chopped
- 1 tablespoon fresh lemon juice
- 1tablespoons olive oil
- Fresh lemon juice
- Salt to taste
- Freshly ground black pepper
DIRECTIONS
- Add black-eyed peas in a pot with cold water and a little salt for at least 5hrs then drain and wash.
- Put blackeyed beans in a pot with water and boil for 15 minutes and drain. Wash thoroughly and return to the stove for another 15 minute in a low fire till the beans are soft.
- Allow to cold and then refrigerate.
- In a large bowl combine black-eyed peas and the rest of the ingredients except olive oil and lemon.
- Combine lemon juice and olive oil in a small bowl; stir well with a whisk and add black pepper and salt to taste. Pour dressing over vegetables; toss gently to coat and serve.
