Greek Sushi Rolls
INGREDIENTS
- 1 large cucumber
- 1 small tomato, diced
- 2 tablespoons kalamata olives, chopped
- 80 grams light feta cheese, diced
- Small sprigs fresh dill
DIRECTIONS
- Using a vegetable peeler, slice cucumber into thin flat strips. Lay slices down on paper towels to drain excess moisture.
- On a cutting board or clean work surface, lay two or three slices of cucumber on top of each other. Place feta cheese at one end and add feta and olives on top.
- Tightly roll each cucumber slice. Stick a small sprig of dill into each sushi piece.
