INGREDIENTS
- 400 gr Lean Chicken minced meat
- 1 Large onion, chopped
- 1 Large carrot, grated2 Cloves garlic, chopped
- 1 Large Green bell pepper, chopped in cubes
- 200 grams of Bio red kidney beans
- 1 1/2 cup tomato concasse ( chopped tin tomatoes )
- 1 Tablespoon tomato paste
- 500 ml Bio vegetable stock
- 2 Tablespoons smoked paprika
- 1 Teaspoon red chili powder or more to taste
- 1 Teaspoon cumin powder
- 1/2 Teaspoon black pepper powder
- 1 Teaspoon salt
- 1 Teaspoon dry thyme
DIRECTIONS
1. Heat the oil in a large frying pan over a medium heat. Add the onion and garlic and cook for 4-5 minutes, or until soft.
2. Add the green pepper and cook for another 2-4 minutes
3. Add the paprika, chili powder, cumin, black pepper, and salt and cook for 1 minute. Add the chicken and cook for 5-7 minutes.
4. Add the tomato paste, chopped tomatoes, vegetable stock, dry thyme and bring to the boil. Reduce the heat to medium-low and simmer for 10 minutes, stirring occasionally.
5. Add the kidney beans and cook for 5 minutes.
6. Serve hot with plain rice or tortilla wraps.
