Scrambled Eggs With Smocked Chicken

INGREDIENTS
- 100 grams Smoked Chicken, cut into cubes ( Allantika Filis )
- 2 free-range eggs
- 4/5 cherry tomatoes, cut in the middle
- 1 small yellow onion, chopped
- 1/2 teaspoon try thyme
- salt to taste
- black pepper to taste
- 1 slice brown or rye bread toasted
- Fresh spring onions, chopped for garnish
DIRECTIONS
- Add the olive oil to a non-stick pan on the stove on medium-high heat. Add the onions and cook until become soft.
- Add the smoked chicken and cook for 2 more minutes, then add the cherry tomatoes and try thyme.
- Meanwhile, beat the eggs in a bowl with some salt and pepper to taste and pour into a saucepan.
- Cook very gently for 3-4 minutes, stirring slowly, until the eggs are softly scrambled. Remove from the heat and stir for a few seconds.
- Serve the scrambled eggs on a fresh toasted brown bread, garnish with chopped fresh spring onions.
** Optional Ingredients ( hot chili pepper, color bell peppers, smoked paprika)
