Chicken Cajun Wrap
INGREDIENTS
FOR THE CHICKEN:
- 1 teaspoon salt
- ¼ teaspoon cayenne pepper
- ¼ teaspoon crushed red peppers
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon pepper
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- 320 gr boneless and skinless chicken thighs, diced
FOR THE WRAP:
- 2 whole wheat tortilla
- ½ avocado, diced
- ½ yellow onion, diced
- 1 cucumber, diced
- 1 teaspoon lemon juice
- Lettuce
DIRECTIONS
FOR THE CHICKEN:
- Preheat oven to 240 degrees Celsius. Grease an 8x8 baking sheet or dish. Set aside.
- Mix together the salt, cayenne pepper, crushed red peppers, garlic powder, paprika, pepper, onion powder, dried oregano, and dried thyme in a small bowl.
- Rub the spice mix onto the chicken.
- Bake for 18 minutes. Remove the chicken breasts from the oven and cover with aluminium foil and bake for another 5 minutes.
FOR THE WRAP:
- In a small bowl, combine avocado, onion, cucumber and 2 Tbsp lemon juice. Season with salt and pepper.
- Heat tortillas one at a time in a frying pan on high heat for 30 seconds each side. Or alternatively, wrap in tinfoil and warm in an oven for 10 minutes.
- To serve, assemble the tortillas with chicken, shredded lettuce, avocado mixture, and roll.
