Chicken Cajun Wrap

 

INGREDIENTS

FOR THE CHICKEN:

  • 1 teaspoon salt
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon crushed red peppers
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon pepper
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 320 gr boneless and skinless chicken thighs, diced

 

FOR THE WRAP:

  • 2 whole wheat tortilla 
  • ½  avocado, diced
  • ½  yellow onion, diced
  • 1 cucumber, diced
  • 1 teaspoon lemon juice 
  • Lettuce 

 

DIRECTIONS

FOR THE CHICKEN:

  1. Preheat oven to 240 degrees Celsius. Grease an 8x8 baking sheet or dish. Set aside.
  2. Mix together the salt, cayenne pepper, crushed red peppers, garlic powder, paprika, pepper, onion powder, dried oregano, and dried thyme in a small bowl.
  3. Rub the spice mix onto the chicken.
  4. Bake for 18 minutes. Remove the chicken breasts from the oven and cover with aluminium foil and bake for another 5 minutes.

 

FOR THE WRAP:

  1. In a small bowl, combine avocado, onion, cucumber and 2 Tbsp lemon juice. Season with salt and pepper.
  2. Heat tortillas one at a time in a frying pan on high heat for 30 seconds each side. Or alternatively, wrap in tinfoil and warm in an oven for 10 minutes.
  3. To serve, assemble the tortillas with chicken, shredded lettuce, avocado mixture, and roll.
