Chicken Shish Kebab
INGREDIENTS
- 800gr chicken breasts, cut into large cubes
- 1/4 cup lemon juice
- 1/3 teaspoon salt
- 1/4 freshly ground black pepper
- 2 tablespoons tomato paste
- 4 tablespoons extra-virgin olive oil
- 3 garlic cloves, minced
- 3/4 cup of plain 0% fat yogurt
- 1 teaspoon dried oregano
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground cardamon
- 2 onions, cut into large chunks
- 1 large green, yellow or red bell pepper, cut into large chunks
- 8 wooden skewers, soaked in water for 20 minutes or 8 metal skewers
DIRECTIONS
- Whisk together the lemon juice, olive oil, yogurt, garlic, tomato paste, salt, oregano, pepper, allspice, cinnamon, and cardamom in a large bowl; add the chicken and toss to coat. Transfer the chicken mixture into a large plastic bag; refrigerate at least 4 hours.
- Preheat an outdoor grill for medium-high heat and lightly oil grate. Thread the chicken, onions, and pepper onto a wooden or metal skewers. Cook on preheated grill until the chicken is golden and no longer pink in the center, about 5 minutes each side. Serve hot with a salad and wholewheat pitta bread.
