Chicken Fajitas

INGREDIENTS
- 400 gr chicken breast
- 1 yellow onion, chopped
- 1 red bell pepper, julienne
- 1 orange bell pepper, julienne
- 1 yellow bell pepper, julienne
- 150 ml tomato sauce
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin powder
- 1 1/2 tsp red chilli powder
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 4 tbs vegetable oil
- 2 tbs fresh lemon juice
- Wholegrain tortillas for serving
DIRECTIONS
1. In a large bowl, add the chicken, 2 tablespoons oil, lemon juice, seasonings and tomato sauce. Mix well to coat, cover with a cling film and refrigerate for 3-8 hours
2. In a large skillet, saute peppers and onions in remaining oil until crisp-tender. Remove and keep warm.
3. In the same skillet, cook chicken over medium-high heat for 7-8 minutes or until no longer pink.
4. Spoon filling down the canter of tortillas, fold in half.
* Optional toppings (Guacamole, salsa , avocado slices, light sour cream, light yoghurt, hot sauce )
