Greek Black Eyed Peas with Spinach

INGREDIENTS
- 400 grams cooked Black eyed peas How to cook Black Eyed Peas ➡
- 1 medium yellow onion, chopped
- 2 cloves of garlic, chopped
- A bunch of spinach
- 1 large tomato, diced
- 250 ml crushed tomato sauce
- 2 tablespoon extra virgin olive oil
- 1 1/2 teaspoon salt
- 1 teaspoon black pepper
- 2 teaspoons smoked paprika
- 1/2 teaspoon lemon zest
- 600 ml water
DIRECTIONS
1. In a large pot over medium heat, sauté onions and garlic in two tablespoons olive oil until soft.
2. Add the spinach and 200 ml water and let it steemed 5 minutes.
3. Add the diced tomato, salt, black pepper, paprika and mix well.
4. Add the cooked black-eyed peas, the tomato sauce, and 400 ml water. Cover and simmer for 15-20 minutes.
5. Add the lemon zest stir and serve hot.
