Eggplant Imam (garlic & tomato stew)

INGREDIENTS
- 3 medium eggplants (unbitter), chopped How to unbitter eggplant
- 1 medium yellow onion, chopped
- 3 cloves of garlic, chopped
- A bunch of spinach
- 1 large tomato, chopped
- 100 ml tomato puree
- 1 tablespoon extra virgin olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon dry thyme
- 1 teaspoon dry oregano
- 100 ml water
- 50 grams light fetta cheese (optional)
DIRECTIONS
1. In a large nonstick pan over medium heat, sauté onions and garlic in one tablespoon olive oil until soft.
2. Add the eggplant, covet with a lid and let them steemed for 5 minutes.
3. Add salt, black pepper, paprika, dry thyme, dry oregano and mix well.
4. Add the chopped tomato, tomato puree, and 100 ml water. Cover and simmer for 10-15 minutes.
5. Served hot with light fetta cheese.
