INGREDIENTS 

  • 3 Cups Soya granules/mince ➡ how to prepare soya mince
  • 1 Large onion, chopped
  • 1 Large carrot, grated
  • 2 Cloves garlic, chopped
  • 1 Large Green bell pepper, chopped in cubes 
  • 200 grams Bio red kidney beans
  • 1 1/2 cup tomato concasse ( chopped tin tomatoes )
  • 1 Tablespoon tomato paste
  • 500 ml Bio vegetable stock
  • 2 Tablespoons smoked paprika
  • 1 Teaspoon red chili powder or more to taste
  • 1 Teaspoon cumin powder
  • 1/2 Teaspoon black pepper powder
  • 1 Teaspoon salt
  • 1 Teaspoon dry thyme

 

DIRECTIONS

  1. Heat the oil in a large frying pan over a medium heat. Add the onion and garlic and cook for 4-5 minutes, or until soft.
  2. Add the green pepper and cook for another 2-4 minutes
  3. Add the paprika, chili powder, cumin, black pepper, and salt and cook for 1 minute. Add the soya mince and cook for 2-3 minutes and then add carrot and cook for one more minute.
  4. Add the tomato paste, chopped tomatoes, vegetable stock, dry thyme and bring to the boil. Reduce the heat to medium-low and simmer for 10 minutes, stirring occasionally.
  5. Add the kidney beans and cook for 5 minutes.
  6. Serve hot with plain rice or tortilla wraps.
