Green Peas With Artichokes

INGREDIENTS 

  • 800 grams Frozen green peas
  • 400 grams Artichokes
  • 2 medium onions, chopped
  • 1 large carrot, cut into cubes
  • 500 ml bio vegetable stock or 1 bio vegetable tube and 500 ml water
  • 240 grams chopped tomatoes
  • 80 grams fresh dill or more to taste
  • 1 teaspoon lemon zest
  • 1 1/2 tablespoons Extra virgin olive oil 
  • 1 teaspoon salt
  • 1 teaspoon black pepper powder
  • 1 tablespoon smoked paprika 

 

DIRECTIONS

  1.  Add the olive oil to a medium-sized pot on the stove on high heat. Sauté the onion for about 1 minute and then add the carrots and cook for 3 more minutes.
  2. Add the chopped tomatoes and salt, pepper and smoked paprika, stir and add the vegetable stock. Bring to boiled and add the artichokes, simmer for  5 minutes and add green peas.                                                        
  3. Simmer in a low heat for 10 to 12 minutes and then add the chopped fresh dill and lemon zest. Simmer for 5 more minutes and serve hot.  

 

 

** Optional Ingredients ( potato, chicken breast, garlic, hot chili pepper, mint)
