Spanakorizo - Vegan Rice With Spinach

INGREDIENTS 

  • 500 grams fresh spinach washed and dry 
  • 1 Cup Basmati rice
  • 1 Large onion, chopped
  • 2 Cloves garlic, chopped
  • 1 Small bunch fresh dill
  • 1 Tablespoon fresh lemon juice
  • 1 Teaspoon fresh lemon zest
  • 1 1/2 tablespoons extra virgin olive oil
  • 2 1/2 bio vegetable stock 
  • 1 Teaspoon salt
  • 1/2 Teaspoon black ground pepper or more to taste

 

DIRECTIONS

  1. Preheat a large non-stick pan in a medium heat.
  2. Add the olive oil and onion and let it cook in a low heat until caramelized, then add the garlic and cook for 2 more minutes.
  3. Add the fresh dill, salt, pepper, and stir add in the pan the fresh spinach and let it cook for 5 more minutes stirring occasionally.
  4. When spinach is cook add rice and vegetable stock, close the lid and let in simmer for 15 minutes or until the rice is cooked. 
  5. Add the lemon zest and juice and stir, serve hot or cold.
