Coconut Cod Fish

INGREDIENTS 

  • 500 gr cod fillets
  • 2 tablespoons olive oil
  • 1 fresh lime 
  • 1 small yellow onion, chopped 
  • 1 fresh red chilli (optional)
  • 2 cloves of garlic, chopped or thinly sliced 
  • 1 stick of lemongrass, cut into 4 pieces
  • 1 x 400 ml tin of reduced fat coconut  milk
  • 1 tablespoon fish sauce
  • Kosher Salt, to taste
  • Fresh Ground Black Pepper, to taste

 

DIRECTIONS

  1. Chopp onions, peel and finely slice the garlic. Pick and set aside the coriander leaves, then finely chop the stalks. Cut the lemongrass into 4 pieces, then finely slice the chilli.
  2. In a wide saucepan, heat a olive oil and soften the onion, garlic, coriander stalks, most of the red chilli, lemongrass for around 5 minutes.
  3. Add the coconut milk and fish sauce and bring to the boil, then add the cod fish and cover the pan.
  4. Steam the fish for 7 to 10 minutes.
  5. Finish with a squeeze of lime juice, then sprinkle with coriander leaves and the remaining chilli to serve
