Sweet Corn Soup

INGREDIENTS
- 1 tablespoon olive oil
- 1 small potato, peeled and chopped
- 1 small onion, chopped
- 1 clove garlic, minced
- 4 cups of bio vegetable or chicken stock
- 6 cups corn, fresh or frozen
- salt and white pepper
- 2-3 tablespoons fresh parsley or thyme
DIRECTIONS
1. Heat the oil in a large pan and add the onions and potatoes. Cook for 3-4 minutes until starting to soften and then add the garlic and cook for 30 seconds.
2. Add the vegetable or chicken stock and bring to the boil. Add the corn and cook, covered, for 10-15 minutes until vegetables are tender
3. With a hand mixer or in a blender, puree the mixture until smooth. Return to the saucepan, and reheat. Season with salt, and white pepper, and fresh parsley thyme.
4. Serve in a soup bowl and eat hot or warm.
